Tonight I’m treating the fam to Paula Deen’s Chicken and Rice Casserole at the recommendation of Rhonda. It didn’t look too bad fat-wise, cause I bought reduced fat cheese and Healthy Choice cream of celery soup, until I got to the CUP of mayonnaise. Girl is a mayonnaise purist — only JFG will do, and that’d be the full-fat version. I think I’m going to start out just putting in half a cup and see what it looks like and then, if it looks dry, I’ll just have to close my eyes and toss in the other half cup…and maybe go the gym for an extra half hour after kickboxing. 8O

No, no, no! Saute in olive oil, Rhonda. Although since we’re talking southern comfort food, I was thinking about totally shooting it all to hell and making a peach cobbler for dessert.

I had some chocolate peanut butter cupcakes and Danniele’s sister’s house the other day - Paula’s recipe. The cupcake itself was fine, but the peanut butter icing ROCKED!

I had a stomach flu when I was in college and the last thing I’d eaten was peanut butter chocolate fudge ice cream before I got sick. Oddly, I can still eat a Reese’s pb cup but beyond that simply thinking about the combination makes me sick.
