Note to Self: Cornbread is a good source of iron and when prepared with a third cup of plain yoghurt in lieu of sour cream, one gets the benefits of the yoghurt. One should not, however, eat half of the pan contents slathered with butter.

I’ve never heard of cornbread made with sour cream. Post the recipe?

Well, if you don’t eat half the pan, Rhonda, and drown it in butter, it’s really not so bad for you.
Sure, Kimberly. 1 box Jiffy cornbread mix, 1 egg, 1/3 c skim milk, 1/3 c plain lowfat yogurt. Mix and bake as directed on the box. It works out to be a sweet, moist cornbread that doesn’t actually resemble real made-from-scratch cornbread.

I have never heard of cornbread made with yogurt, that’s a new one on me. I love cornbread and I usually make it from scratch, yum!!!!!!

It sounds like that would keep them from becoming a crumbly mess (which is what mine always end up as). Still tastes good but…
And I agree, cornbread isn’t supposed to be good for you

ginger, the plain yoghurt taste a lot like sour cream. You’d never eat it and think yoghurt. Actually, it sort of is like using buttermilk.
Kira, my mother used to fry hers into a very thin, crisp flat cornbread. I’m sure she fried it in Crisco. Maybe even bacon drippings. I’m sure it wasn’t healthy but it was darn good.
